How to make good fried rice
Some excellent tips in this post, along with a recipe for Shrimp Fried Rice. For example, I didn’t realize (a) that you use yesterday’s rice, not rice cooked today, and (b) you spread the rice over the bottom of the sauté pan or wok and let it sit there and cook for a while, not be constantly stirring and flipping.
