Mark Bittman shows how to roast a turkey quickly: spatchcock the turkey. The video at the length shows exactly how, and it was done in 35 minutes.

  2. Here’s a post from a couple of years ago on how to spatchcock a chicken. I often use that technique on chickens, but never thought of doing a turkey. The backbone, of course, is added to the giblet pot to make the broth.
