Bean salad grub

Worked out well:

4 c cooked small red beans, drained
4 c cooked black rice
1 large sweet onion, chopped
1 stalk green garlic, minced
3 handfuls chopped celery
1 bunch chopped Italian parsley
1 red bell pepper, chopped
1 green bell pepper, chopped
3/4 c sliced almonds
2 c baby kales, raw, chopped
1 c crumbled feta
1/2 cup shredded Parmesan
1/3 c EVOO
3 Tbsp red wine vinegar
1 Tbsp Dijon mustard
pinch salt
8 green olives, chopped coarsely
2 Tbsp capers

UPDATE: A chopped avocado would be nice, but don’t have on hand. I decided to add some umami, and rather than soy sauce or a few anchovies went for a drained tin of sardines. Also bumps up protein and omega-3 and calcium, etc.

As I eat away at it, I might later add some chopped cabbage…
