Dinner tonight: Pollo alla Cacciatora (Hunter’s Wife’s Chicken)

I made this recipe pretty much as written, with only a few of the obvious additions: I didn’t have any anchovies, so I used Red Boat Fish Sauce, an anchovy sauce (as is Worcestershire sauce), all with the goal of pumping up the umami. And of course I tripled (roughly) the amount of garlic and added about 1/4 tsp crushed red pepper. I resisted the impulse to add thing lemon slices, capers, black olives, and/or pine nuts.

Cooking the veg (onions, red bell peppers, carrots, garlic, etc.) for 8 minutes is a very good idea: until it starts sticking.

Update: realized something else that would be good in this: mushrooms! plus more umami. I didn’t have any fresh mushrooms but I have some dried black trumpet mushrooms, which are cooking the sauce as I type. I am cooking it an extra 30 minutes for the mushrooms, but it was somewhat liquid-y when I added the mushrooms, so I’m hoping the mushrooms will absorb some liquid, the Roma tomatoes will thicken, and some water will cook off. Also I did add black olives. And capers.

What would really be good is 3/4 c freshly (and finely) grated Parmesan cheese stirred in….

Update: Did not have Parmesan, but did have Swiss, so grated that and got a sort of French onion soup effect. Damn tasty, too!

Update: BTW, the recipe is very wrong: no 8-qt saucepot is needed. I used my 4-qt 10″ sauté pan and it had plenty of room. I could have even used my 4-qt stockpot, but it would have taken forever to brown the chicken.

And note I cooked it a total of an hour, and the chicken seemed fine with that.

A manly shave

There was discussion on Wicked Edge about “manly” aftershaves, and the first thought I had was Alt-Innsbruck. But that made me consider a totally manly shave, and that brought Special 218 off the shelf. My Rooney Style 2 Finest is a favority shaving brush, and I like more and more the straightforward but extremely smooth-shaving iKon Shavecraft #101 open-comb. If you are contemplating your wishlist for the holidays, give a thought to including that razor.

I forgot to check which brand of blade, but I would bet it’s a Personna Lab blue.

The lather today was particularly good and enjoyable. Great way to start the day.
