Recent discovery (Carnivores only)
I just recently discovered the flat-iron steak, thanks to trying one on sale in the mark-down bin at the meat department in Safeway. It’s quite tender, very tasty, and of course dead-easy to cook. I use a saucing method I learned a while back: a pat of butter melted on the steak, a splash of Worcestershire sauce, hickory-smoked slat, freshly ground pepper, a dusting of garlic powder, and a sprinkle of dry mustard. Quite tasty.
