I just made had this for breakfast:
3/4 cup (180 ml) coconut milk (amounts to 1/2 can of coconut milk)
2 tablespoons chia seeds
1/2 teaspoon vanilla extract
Mix all of the ingredients in a jar or bowl. Cover and place in the refrigerator overnight (or for at least four hours) to gel. Serve the pudding with some additional coconut milk or some fresh or frozen berries.
I got the recipe from DietDoctor.com, which is devoted to low-carb eating. This breakfast is quite tasty and has the sort of sweetness many seek in their breakfast, but without all the carbs. (Quite a few seem to like to have a dessert for breakfast.)
