What herb is your shot in the dark?

When you know that the dish needs a boost, but you’re not sure about how much or which direction, which herb do you reach for?

My own choice is thyme: risky, but assertive. If you’re unsure of how to pronounce a word, say it loud. You’ll sound confident if correct, and will get a correction if wrong: one more word nailed.

Still, there are other choices. I think marjoram is sort of a cop-out, from someone who mispronounces words in a mumble.

Oregano is always a good choice, but therefore a safe choice as well. Not bad, but not impressive.

Garlic is good, but now we’re venturing away from herbs and into vegetables.

Smoked paprika will often serve, and at least looks assertive.

So: what’s your choice, and why?

  2. I have Za’atar but haven’t used it because… well, because I haven’t used it so I don’t understand it. I’m going to start. One way I’ve used to get an idea of an herb is to use it in an omelet, so today I’ll have a Za’atar omelet.
