New to me food: Leek scapes
I’ve never seen these before, so of course I bought them. I continue to try to buy a new vegetable or fruit on each shopping trip, and these look interesting. Photo is from EatingRichly.com, and their blog post describes what they are and how to cook them: basically, like asparagus. I also, in fact, bought some purple asparagus that looks quite good, so I may sauté them together.
I also got some green garlic, which I have had before, so I’ll probably cook that with the leek scapes and asparagus.
All are 0 points, though I’ll use some olive oil that will add a few points.
And I picked up some amaranth. I will probably make a porridge of it (same recipe as oat groats: add 1 cup of amaranth and a pinch of salt to 3 cups boiling water, reduce heat to simmer, cover, and cook until thick, which for amaranth is about 20 minutes vs. 60-75 minutes for oat groats.
I’m tempted to pop amaranth, but I’ll wait on that for another batch.
It’s always fun to have new foods.
Update: Here’s a shocker: information on the Internet is not always reliable.
Time required to steam quartered beets. What I read: 15 minutes. Actual time: about an hour.
Time required to cook amaranth. What I read: 20 minutes. Actual time: 60-75 minutes.
Update 2: Amaranth is quite tasty—and quite healthful.
