Dinner: Broccoli Rabe My Way

Here’s what I had for dinner:

1/3 cup cooked kidney beans
1/4 cup cooked spelt
1 cup of Broccoli Rabe My Way — see recipe

Broccoli Rabe My Way

about 1.5 Tbsp EVOO
3 spring onions, chopped including leaves
about 2 Tbsp minced ginger root
about 1.5 Tbsp minced fresh turmeric
8 cloves garlic, chopped small
about 3/4 pound domestic white mushrooms chopped
about 1.5 Tbsp freshly ground black pepper
1 good-sized bunch broccoli rabe, chopped
1 lemon, ends discarded, cut into slabs and then diced (including seeds)

Put 12” cast-iron skillet in cold oven and turn to 350ºF. While oven heats, chop the garlic first to give it time to rest, then prepare the rest for the pan.

Once skillet is heated, put on a hot burner, add olive oil and spring onions, turmeric, and ginger. After onion softens, add garlic, cook for a minute, the add mushrooms, salt, and pepper. Cook until mushrooms start to release their liquid, then add the rabe and cook until it starts look wilted. Add diced lemon, stir and continue cooking until it’s ready to eat. (Undercooking not an issue.)
